Ficelle’s signature sourdough. Each loaf weighs 2lbs and is comprised of (85%*) bread flour, (5%) whole wheat flour, and (10%) rye flour. It is leavened with a whole wheat sourdough culture. The whole wheat in the culture gives a slightly sweet tanginess to the bread. The French name is Pain de Campagne which means “country bread”. The kitchen uses King Arthur special patent bread flour which has a high protein low ah content. The kitchen uses the country French sourdough for tartine d’avocat, smoked salmon toast, almond butter and banana toast, and grilled cheese.
